Mr. Heinz Beck is an Italian Chef who opened his restaurant in Tokyo in November 2014.  Actually, he first came to Japan way long before, in 1989.  He told, “I have been working in many places around the world, but I could not forget the experience with my first visit to Japan.  Since then, I always wanted to have my own restaurant in Tokyo.  My dream has finally come true, and I am very happy.”

Kaiseki cuisine he met in Kyoto, amazing sushi he found in Tokyo… healthy Japanese food is a perfect balance of “gastronomy and health” which he respects as an ideal.  High quality Japanese ingredients are something he can count on the same way he serves in Italy.

Japanese Kitchen is Paradise!

Another Japanese ingredients Mr. Heinz favors is fish, just like Oiso Vegetables, which Mr. & Mrs. Masahiro Ishii grow at Cow Bell Farm where we introduced in part one.  The reason he likes fish is that in Japan, there are various kinds of fish all year long and each fish is delivered to the kitchen in perfect condition at its best season.  He said that nobody in Europe pays much attention to the seasonality of the fish like Japanese do.  Mr. Heinz learned beautiful taste of freshly delivered fishes best season when he came to Japan.

The dish he chose this day was kinmedai, a perfect fish for winter season.  It was delivered from Numazu, Shizuoka Prefecture and currently is one of his favorites.  The ingredient he brought with the kinmedai was pumpkin and lemon, also came from Cow Bell Farm.  “Sweetness of the pumpkin and acidity of the lemon go very well, and it makes perfect combination with kinmedai which is rich in mineral.  “When I found this beautiful flavor, I was very excited.  It makes perfect Italian lunch.”

Mr. Heinz stated that Japan, the country where you can cook seasonal fish every season is “the best on earth” for the chef.  The Japanese fish dish which moved three-starred chef’s both tongue and heart could be never found in Italy.
