“Heinz Beck” a restaurant in Tokyo of Mr. Heinz Beck, the authority of an Italian cooking, is located at Marunouchi, Tokyo.  White and beige based interior, dim light, fresh flower placed casually on the table… impression I received was all soft and pleasant.

Mr. Heinz is an ace chef who brought lots of stars to his restaurants.  Wondered what a powerful man he could be, but he was not so when I met.  His expression filled with cheerful smiles overlap with the same impression I got with the restaurant in the beginning.

Explore “Gastronomy and Health”

“Gastronomy and Health.”  That is what Mr. Heinz holds up as his own cooking philosophy. When you say gastronomy, it sounds somewhat extravagant, high in calories, and has unhealthy images, but he tries to overturn the common image and studied nutrition and cardiology with university professors and offers healthy and good food for your body even at high-class restaurants.

Oiso Vegetables Which Meet Chef’s Ideal

Such Mr. Heinz named the best at “My Favorite Japan,” is the vegetables delivered from Oiso, Shonan.  Producer is Mr. and Mrs. Masahiro Ishii of Cow Bell Farm who is seventh generation of long-established local farmer.  According to the Chef, “The vegetable has been grown just like in Italy and has perfect taste and smell of organic vegetables.”

Able to Reduce Salt with Taste of Vegetable Itself

The menu using The Ishiis Oiso Cabbage (such as cabbage and cavolo nero) is “Tortelli stuffed with cheek beef, with savoy cabbage sauce and peanuts cream.”  By using powerful cabbage with lots of minerals, the Chef could use less salt and able to balance “gastronomy and health” which he aims to.

Cow Bell Farm which grows perfect Italian vegetables in Japan is now indispensable presence to him.  While interview, Mr. Heinz praised Mr. and Mrs. Ishii and their vegetables and said “Beautiful” number of times.  The know-how of The Ishiis growing vegetables for seven generation is supporting kitchen of the experienced chef firmly from the backyard.
